Y vaya que fue una misión con este restaurante...
Hace 5 semanas desde su inauguración me había hecho la firme promesa de visitar lo más pronto posible el nuevo restaurante del chef bajacaliforniano Javier Plascencia. Desde que probé por primera vez sus exquisitos experimentos en el restaurante Erizo se abrió un abanico de sabores y combinaciones por descubrir en la creatividad de este espectacular chef y en las joyas culinarias que ofrecen productores de la región con los quesos, vinos, hortalizas y demás hierbas.
Misión 19 esta ubicado en el segundo piso del edificio VIA Corporativo en la ciudad de Tijuana. Es la primera construcción ecológica en la región que contempla la reducción del uso de recursos, la selección de los materiales y el eficiente aprovechamiento de energía y el agua. Razón suficiente para visitar este hermoso edificio de concreto y vidrios y sus restaurantes y galerías en exhibición.
Y como diría Timbiriche, "Y la fiesta comenzó" con una deliciosa hamburguesita muy bonita de carne de res deshebrada con aderezos de queso y aguacate de la casa. El tamaño de la mini hamburquesa es el justo bocado para abrir el apetito en lo que sirven el siguiente platillo, aunque la verdad de haberme servido 13 de esos bocaditos tan lindos me los hubiera comido todos!
Seguí la recomendación del mesero y pedí la Ensalada de Betabel Dorado. Confiezo que al principio en mi ignorancia pensé que se trataba de betabeles magentas dorados en sartén, pero no, la verdura es dorada. No es el típico betabel rosa radioactivo del que tanto me gusta su color. El sabor es el mismo, aunque si combinas el betabel con arúgulas, lenteja "beluga", queso añejo, hongos, crutones y puré de betabel rosa radioactivo pues se convierte en una ensalada multisabor de combinaciones fantásticas.
El plato fuerte fue un Pollito de Leche en una salsa de romero con trufa negra, gajos de papa y tiritas de zanahoria. Aunque la recomendación fue pedir un corte, ya que estan hechos en perfecta cocción en un horno especial que mantiene la carne jugosa sin importar su término, me ganó la tentación que tenía desde hace tiempo de probar por primera vez las trufas. Y el 1/8 de trufa que venía en el platillo justificó perfectamente mi elección por la trufa negra. La ensalada y el pollo los acompañe con una copa de vino artesanal de la región y panecitos caseros de semillas, a la mexicana y a la mantequilla. Y es que también los panes tienen su papel en este lugar. Hay como 6 o 7 tipos de panecitos hechos al momento con diferentes mezclas de semillas y especias. Después de la primera probada es difícil escoger los siguientes panecillos, yo tuve que repetir el de semillas y especias.
Cerré con broche de oro degustando 4 quesos artesanales con 3 mermeladas de la casa. De guayaba, miel de agave y nueces y la ultima y la más buena, de flores de jamaica.
En 14 de febrero, o 15 de febrero, o 29 de Marzo o cualquier otro día con o sin festejo será la ocasión perfecta para conocer las maravillas que se le ocurren a este chef.

5 weeks ago since its grand opening I made the promise to visit as soon as posible the new restaurant of the baja chef, Javier Plascencia. The first time I tasted his exquisite experiments in the restaurant Erizo, a fan of flavors and undiscovered combinations in the creativity of this spectacular chef and the wonders offered by local producers of cheese, wine and vegetables was opened for me.
Misión 19 is located in the second floor of the building VIA Corporativo in Tijuana, Baja California. It is the first eco construction built in the baja region and it's designed to give an efficient use in resources, energy and materials of construction. Reason enough to visit this beautiful building made of glass and concrete and its restaurants and exhibitions.
And Zee Party got started...
With a super tasty, cutie, little burger made with tiny shredded meat and 2 dressings of cheese and avocado. This mini burger has the perfect size of a munch while you wait for the main courses, though I would've eaten all of those adorable burgers if possible.
I followed the waiter's recommendation on the salad, I had a Golden Beet Salad. I must confess that at the very beginning I was expecting the regular radioactive magenta beets fried or grilled, but no, it was actually a natural golden color in the vegetable. It pretty much has the same flavor, but if you toss some rucola, "beluga" lentils, aged cheese, mushrooms, croutons and radioactive magenta beet puree it turns into a flavorful salad of fantastic combinations.
I tried also a "Baby Chicken" in a rosemary and black truffle sauce served with potato wedges and carrot strips. I couldn't resist the temptation of eating for the first time a black truffle and discover the mystery of these gifts from nature, despite the waiter strongly recommended any of the steaks cooked to perfection in a special oven that keeps the meat moist and juicy.
I had a glass of wine of the region and also tried the bakery of the house, which is also a remarkable thing of this restaurant.
There are like 6 or 7 different types of buns made with seeds and spices. I had a hard time choosing a different one to taste and I definitely had to repeat the seed bun.
I finished this wonderful meal tasting 4 handcrafted cheeses with 3 fabulous homemade marmalades of Guava, Agave Honey and Hibiscus flowers.
On Feb 14th, or 15th or March 29th or any other day with or without a celebration will be the perfect occasion to know some of the wonders created by this chef.
